AeroGarden let me give their Harvest 360 a test run before the holidays. Since the seeds are still in progress and I wasn’t quite ready to cook up these growing greens, I decided to use the mint leaves to shake up a few cocktails. Obviously.
Since it’s almost time to close out pumpkin season and move on to peppermint and gingerbread, I figured this pumpkin mint mojito would be festive enough for Fall but get us walking in a mint-er wonderland.
The flavor from the pumpkin puree enhances the spiced rum and the mint flavor enhances the pumpkin puree. She works herself out quite nicely. Pumpkin Mint Mojito
9 mint leaves, plus a sprig for garnish
1 tablespoon brown sugar
2 ounces spiced rum
1 tablespoon pumpkin puree
Juice of 1/2 a lime
1 ounce club soda
